One of the offerings: a bacon-flavored beer called the “Baconed VariaBull.”
“A couple of months ago we did a smoked maple ale with coffee in it,” Ridgefield Park native Bob Olson told Daily Voice.
"We are playing up those flavors from the cherry wood smoke into the beer," he said. "It gives a subtle bacon flavor. Instead of dry hop, we are 'dry-baconing' it.”
The first festival at Waterloo Village in Stanhope will feature New Jersey-only craft beers, restaurants, food trucks and chefs.
A total of 20 Garden State breweries, including Bolero Snort, will pour a variety of brews.
Opening in 2013 in Ridgefield Park, Bolero Snort Brewery was launched by Olson and Andrew Maiorana of Staten Island.
“We are a tiny company,” Olson said. “It is just me, my partner and one full-time employee.”
Olson had been home-brewing for a number of years when he met Maiorana at a home brew club.
After hanging out a bunch of times over several draughts, the two decided to collaborate. They opened the Ridgefield Park location, which serves as a warehouse, while brewing at High Point Brewery in Butler.
The beers are then distributed locally to The Dog and Cask in Rochelle Park, The Plank Pizza Co Beer Parlor in Saddle Brook, Midland Brew House in Saddle Brook and Zin Burger in the Garden State Plaza, among other locations.
The VIP Hour (sponsored by New Jersey Craft Beer) takes place from 1 to 2 p.m. and will feature a meet & greet with the brewers, pitmasters and chefs, first access to rare and special beers and appetizer samplings prepared by Tim "The Brew Chef" Schafer.
Tickets range from $25 to $95.
